Bill’s Liverpool Breakfast Review: April 2017
For those who don’t know, Bill Collison both driven and inspired by his Dads love for fresh home grown produce, started out in a small space that his dad showed him, which was no bigger than a shed, just off the high street in Lewes in East Sussex. Rapid Success and growth meant the need to acquire new premises, but tragedy struck in 2000 with the heavy floods wiping Bill’s shop out. Starting from scratch Bill remained positive and went from almost bust to boom.
located within the heart of lovely Liverpool One is the brilliant Bill’s Restaurant. On a wet wind swept morning, we headed on down for breakfast at Bill’s with terrific tasting tipples, as we needed a relaxed way to start the day. Welcomed warmly by Jose, who showed us to our rustic stripped wood seating area right by the window, which was ideal for people watching, not that we needed to look outside, as the place was bustling and full of family friendly atmospheric charm. Our server, Aaron arrived at our table with enthusiasm and was raring to go. Loved his personality, attentive throughout and had a genuine desire to provide a quality customer focused service.
Bill’s love for fresh produce clearly is at the forefront of the business and this showed in the offerings that we had. Super scrummy scrambled eggs with smoked Salmon on toast went down a treat. The Bills amazing lip-smackingly tasty vegetarian breakfast provided Poached free range eggs, tomatoes, mushrooms, tomato, hummus, guacamole, sweet, chilli sauce, basil and toast. With add on’s which included the baked beans and the bubble and squeak rosti, I was one happy diner. All this fare was washed down with some amazingly well balanced cocktails such as the lush ‘just peachy bellini’, which has perfect peach purée topped with Prosecco. The ‘bramble mojito’ worked up with white rum, blackberry purée, mint, vanilla and lime juice was deliciously crisp, fruity and refreshing. Finally, somewhat of a Bill’s classic the ‘Hedgerow Fizz’ mixes up Prosecco, elderflower and is topped off with a beautiful frozen blackberry.
At Bill’s Liverpool, you will enjoy quality food and drinks, have a ‘lorra lorra laughs’ and that is why we, ‘love you yeah, yeah, yeah, yeah’ and with love like that you know we will be back!

I have heard the story behind Bill’s before and it is such a great story. I really like his emphasis on fresh local produce and his food looks to be simply amazing. I’m glad you had a good experience here as well x

This is my kind of place. I love the emphasis on fresh and local produce. If I were going .. I’d definitely order eggs with veggies and a ‘Hedgerow Fizz’ to wash it down!

Oh wow that food and the drink sound amazing. I love scrambled eggs and smoked salmon and am also a sucker for guacamole. The Hedgerow Fizz sounds really good I could quite easily have one now!

This looks like such a great place to have a meal and the story behind it is very inspiring. I love restaurants that use fresh local produce. The cocktails sound amazing as well, especially the just peachy bellini!

Wow, what a great story about a positive outcome from a tragedy. This restaurant sounds delicious. I love the fact that they serve cocktails at breakfast. I live in the US and as far as I know there aren’t restaurants that do that. Lol. The pictures of the food had me wishing I could go eat here.
